Trying New Pickling Juice Recipe..

Mr. Crafts4others and I decided to make several different jars of refrigerated veggies with different spices. For the first time we tried to pickle cucumbers, cauliflower, and jalapeños. The jalapeños were all for Mr. Crafts4others and he said they ended up being really spicy, so he had to eat them with cucumbers or a blue cheese dressing. In the cucumber and onion jar we just mainly put in peppercorn and a small amount of cumin.

So far one jar of the jalapeños are gone, the cucumber and onion, as well as the cauliflower, cucumber, carrot and onion. So the only jars left in this photo are the big jars.

We previously ate some of this with leftover meatballs and roasted cauliflower.

Refrigerated Pickling Vegetables

I have seen a few things about pickling veggies, but never tried to make them before. Great thing is that there is no canning involved in this and it was really easy to do. I used peppercorn, mustard seeds, garlic, cumin seeds, salt to add spices to the onions, cucumber and carrots. In another container I made the spices to be ground turmeric, garlic, salt, and peppercorn. I thought I added a little too much turmeric in that one, but Mr. Crafts4others loved it. Today (being Tuesday), I made another one but with onions, carrots, and bell peppers with cumin seed, garlic, sugar, salt, apple cide vinegar, peppercorns, turmeric, red pepper flakes. This is the first one that the brine had sugar in it, but that will probably make it in the end more of a sour/tart and sweet flavor. We will definitely know in the next day or so.

Here is the main Recipe that I used to create the pickled vegetables for the picture above.

This is the new one and waiting for the brine to cool before putting it in the fridge. The color looks different since I used different spices and apple cider vinegar.

Have you tried pickling before? Do you have some good recommendations of spices that go good together?

Mini Carrot..

I know this carrot is more of a baby carrot, or what I have been calling so far is the mini carrot. This happened to be the biggest carrot from my garden. I have learned a few things, that I will definitely in a few weeks grow more carrots. I will plan on making them the baby size and full grown size as well. I have never grown carrots before, and not sure if the super sweet taste of them (which does not compare by any means from the store bought versions) was do to them being baby size or homegrown. Does anyone else know? Do you have a garden? Hope it is going well!
